Description

Pile your pancakes high and top with yoghurt and berries for a delicious, nutrionally approved breakfast. This recipe for fluffy pancakes is a must.

Method

Step 1 of 4

Heat berries, syrup and 2 tbs water in a small saucepan over medium heat. Cook, stirring, for 8 minutes or until sugar has dissolved and mixture has thickened. Transfer to a bowl and stand for 30 minutes to cool.

Step 2 of 4

Meanwhile, place bananas, eggs and oats in blender and blend for 10 seconds or until smooth. Set aside for 15 minutes to rest.

Step 3 of 4

Spray a large frying pan with oil and heat over medium heat. Add 2 x 1/3 cups batter to pan and cook for 2 minutes or until bubbles appear. Flip and cook for 2 minutes. Repeat with remaining batter to make a total of 12 pancakes.

Step 4 of 4

Serve pancakes topped with yoghurt and berry compote.
