  • 1 1/2 cup reduced fat milk
  • 1 banana, sliced
  • 2 pears, sliced
  • 1 cup blueberries
  • 5milliliter virgin olive oil spray
  • 1teaspoons ground cinnamon
  • 1tablespoons honey (to serve)
  • 120grams rolled oats
  • 1 1/4 cup light Greek-style yoghurt
  • 4tablespoons Macro banana flour
  • 2 free range eggs

Method

Step 1 of 4

Place oats in a food processor and process until finely ground. Add banana flour, eggs and milk and process until well combined.

Step 2 of 4

Combine yoghurt and cinnamon in a small bowl and set aside for serving.

Step 3 of 4

Heat a crepe pan over medium heat and spray lightly with oil. Pour 1/8 of the batter into the pan, tilting from side to side to cover the base. Cook for about 1 minute or until golden. Flip and cook second side for about 30 seconds. Repeat with remaining batter.

Step 4 of 4

Serve crepes with slices of pear, banana and blueberries, cinnamon yoghurt and a drizzle of honey.
