- 1 1/3 cup oat milk
- 2 medium banana, peeled and mashed
- 50grams blueberries
- 1tablespoons vanilla extract
- 1/2teaspoons baking powder
- 1tablespoons coconut oil
- 2tablespoons agave syrup

Description
These wholesome pancakes have a little extra tang from the blueberries.
Method
Step 1 of 3
In a bowl, combine the oats and oat milk and leave to soak overnight in the fridge. The next day, mash the blueberries and bananas and combine with the soaked oats.
Step 2 of 3
Add the vanilla extract and baking powder to the mixture and combine fully. Heat up a non-stick pan to a medium heat with the coconut oil and fry some of the mixture for 4 minutes.
Step 3 of 3
Flip the pancake over and cook the other side for a further 3 minutes before removing from the heat. Serve with a drizzle of agave syrup and fruit if desired.
