  • 1/4 cup milk
  • 1 pinch cinnamon
  • 4teaspoons honey
  • 2 cup frozen mixed berries
  • 8 slice multigrain bread
  • 170grams icelandic style vanilla yoghurt
  • 6 free range eggs

Method

Step 1 of 5

Heat a non-stick, medium saucepan over medium heat. Place frozen mixed berries in saucepan and cook for 5 minutes, stirring often. Remove from heat.

Step 2 of 5

Heat a non-stick, large frying pan over medium heat.

Step 3 of 5

In a small bowl, whisk the eggs, milk and cinnamon. Dip bread into the egg mix and fry two slices at a time. Cook on each side for 1 minute.

Step 4 of 5

Mash berries with a fork.

Step 5 of 5

Place 2 slices of French toast on a plate, 1/4 of the berry, 1/4 tub of yoghurt and drizzle each one with 1 tsp of honey.
