- 4 wholemeal English muffins
- 2 small tomatoes, sliced
- 4 slices Woolworths Light Tasty Cheese
- 1 cup baby spinach leaves
- 1teaspoons olive oil
- 4 free range eggs

Method
Step 1 of 2
Heat half the olive oil in a non-stick frying pan over medium heat. Crack in two eggs and fry for 2 minutes or until whites are just set and remove from pan. Repeat with remaining olive oil and eggs.
Step 2 of 2
Toast muffins and top each with cheese, tomato, spinach and a fried egg. Serve topped with cracked black pepper to taste.
