- 5milliliter olive oil cooking spray
- 2 cups rolled oats
- 2teaspoons ground cinnamon
- 1teaspoons baking powder
- 2 cups milk
- 1/4 cup maple syrup (plus extra to serve)
- 2tablespoons white chia seeds
- 1teaspoons vanilla extract
- 3 ripe bananas, 2 mashed, 1 sliced diagonally
- 3/4 cup walnuts, chopped
- Greek-style yoghurt (to serve)

Method
Step 1 of 4
Preheat oven to 200C/180°C fan-forced. Spray a 25cm (5cm deep) round baking dish with oil.
Step 2 of 4
Place all the ingredients, except sliced banana, walnuts and yoghurt, in a large bowl. Stir to combine.
Step 3 of 4
Transfer mixture to dish. Top with sliced banana and scatter over walnuts.
Step 4 of 4
Bake for 35 minutes or until golden. Cool for 5 minutes. Serve warm with yoghurt and a drizzle of extra maple syrup.
