  • 2 bananas, mashed
  • 2tablespoons maple syrup
  • 1/4 cup raw nibble mix, half reserved for topping
  • 1 free range eggs, lightly beaten
  • 2 cup organic quinoa flakes

Description

These quinoa power bars make a great snack for adults and little ones alike. They’re full of delicious nuts and seeds with tasty hints of fruit.

Method

Step 1 of 3

Preheat oven to 160°C/140°C fan-forced. Line a 271/2 x 171/2cm (31/2cm deep) slice tin with baking paper.

Step 2 of 3

Place all the ingredients in a large bowl, mixing well to combine. Transfer to tin, pushing down with back of spoon to smooth surface.

Step 3 of 3

Gently push reserved nibble mix into surface, then bake for 20 minutes. Remove from oven and cool in tin. Slice into 12 bars and store in an airtight container for up to 1 week.
