  • 1/4 small red onion, finely chopped
  • 2teaspoons extra virgin olive oil
  • 1/2 lemon, juiced
  • 1tablespoons drained baby capers
  • 1 gherkin, finely chopped
  • 2 sprigs continental parsley, leaves picked, finely chopped
  • 1 Hass avocado, halved, deseeded, finely chopped
  • 1tablespoons Dijon mustard
  • 1 Woolworths stone baked sourdough mini baguette, thinly sliced diagonally, toasted

Description

Creamy avocado, crisp red onion, punchy mustard and lemon make this vegan dish sing. Try this fresh twist on tartare for a vibrant starter.

Method

Step 1 of 2

Reserve 1 tsp onion. Combine oil, lemon juice, remaining onion, capers, gherkin and half of the parsley in a medium bowl. Add avocado, then gently stir to combine.

Step 2 of 2

Place a 12cm round cutter (see Tip) on a serving platter. Lightly press avocado mixture into cutter and compact slightly. Remove cutter. Top with mustard, then scatter over reserved onion and remaining parsley. Serve with bread.
Instruction tip
Tip:
If you don’t have a 12cm round cutter, fold a sheet of foil in half to form a long strip. Shape into a 12cm round and tape together to hold its shape.
