  • 4.50kilograms Bertocchi Gold Half Ham On Bone
  • 1 mango, flesh only
  • 1 cup honey
  • 2teaspoons dried chilli flakes
  • 1 stick cinnamon
  • 1 star anise
  • 1teaspoons ground ginger
  • 1 bunch thyme, sprigs picked

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Line a roasting pan with baking paper.

Step 2 of 4

Using a small knife, cut ham rind 10cm from shank end. Starting at the opposite end to shank, run your thumb under rind to separate it from fat. Peel back and remove rind. Place ham in pan, then wrap shank end in foil.

Step 3 of 4

Blitz mango in a food processor. Add mango to small saucepan with honey, chilli, cinnamon stick, star anise and ginger. Cook on low heat, stirring constantly, for 5 minutes or until fully combined.

Step 4 of 4

Brush ham with glaze. Bake, basting with remaining glaze every 15 minutes, for 1 hour and 15 minutes or until ham is golden and caramelised. Transfer to a platter and rest. Wrap ham shank with muslin and decorate with thyme. Slice and serve with extra glaze.
