- 1 jar laksa paste
- 400milliliter coconut milk
- 4 chicken thighs, chopped into 5cm pieces
- 500milliliter chicken stock
- 1 head broccoli, roughly chopped
- 2 bunches Asian greens, roughly chopped
- 1packets vermicelli rice noodles
- 1packets bean sprouts (to serve)
- 1 bunch coriander (to serve)
- 1 lime (to serve)

Description
If you are after a tasty but quick midweek dinner to feed the family then this is for you.
Method
Step 1 of 6
Heat a large deep frypan on medium high heat. Add the laksa paste and sauté for a couple of minutes until fragrant.

Add the coconut milk and chicken stock and bring to the boil.
Step 3 of 6
Add the chopped chicken and turn the heat down to a gentle simmer. Put the lid on and simmer for about 10 minutes until the meat is cooked through.

While the chicken is cooking, prepare the vegetables and the noodles. Place the noodles in a heatproof bowl and pour over boiling water. Let cook for about 2 minutes and drain. Rinse with cold running water. Divide noodles between 4 bowls.

Once the chicken is cooked through, add the vegetables and steam for about 2 minutes until cooked to your liking. I like mine still a bit crunchy.
Step 6 of 6
Ready to serve! Divide laksa soup between bowls, add bean sprouts, fresh coriander sprigs and a squeeze of lime. Bon appetite! Enjoy
