  • 3 large eggs
  • 2teaspoons espresso powder
  • 100grams plain flour
  • 1teaspoons baking powder

Description

The only thing better than a good brownie is a good brownie with coffee in it. These mocha brownies are rich and delicious.

Method

Step 1 of 4

Pre-heat the oven to 170°C. Place the chopped chocolate and butter in a heat-proof bowl over a saucepan of boiling water, ensuring the bowl doesn't touch the water. Stir until melted. Remove from the heat and leave to cool slightly.

Step 2 of 4

Whisk the eggs and sugar together in a large bowl and pour over the chocolate mix. Stir well with a wooden spoon to incorporate.

Step 3 of 4

Whisk the flour, baking powder, salt and espresso powder together in a large bowl. Tip into the chocolate mix and stir to combine.

Step 4 of 4

Pour the batter into a lined 8 inch baking tin and bake for 20 minutes, until the top has crusted. Remove from the oven and allow to cool completely. Chill in the fridge for 1 hour, slice and serve.
