- 60grams light brown sugar
- 1 1/4 cup cream
- 1tablespoons cocoa powder (to serve)

Description
These elegant cappuccino mousse cups make an impressive dessert.
Method
Step 1 of 4
Whisk the cold coffee and egg yolks together in a large bowl with an electric whisk. Place the bowl in the fridge.
Step 2 of 4
Whip the cream to soft peaks in a large bowl, remove 1/4 and set aside. Whisk half of the sugar with the remaining cream. Add the coffee and egg yolk mix and whisk until smooth.
Step 3 of 4
With clean whisks, whisk the other half of the sugar with the egg whites in a metal bowl until stiff peaks form. Fold the whipped cream and sugar mixture into the egg whites gently, until well incorporated.
Step 4 of 4
Divide the mix between 4 glasses and chill for 4-6 hours. Top each with a dollop of the remaining cream and a sprinkle of cocoa powder and serve.
