  • 240grams raw cashews, soaked in water for 4 hours, drained
  • 120grams coconut yoghurt
  • 1/2 cup maple syrup
  • 1teaspoons vanilla extract
  • 1teaspoons agar agar
  • 4tablespoons granulated sugar, for torching the brulee

Description

This cashew crème brulé is a fancy vegan dessert that takes only a few steps and ingredients to prepare, although everyone will think you spent hours baking in the kitchen.

Method

Step 1 of 3

Pour the cashew liquid into a pot setting it onto medium heat on the stovetop. Bring the mixture up to a simmer whisking in the agar agar, continue to stir and simmer until the mixture has thickened and is starting to pull away from the sides of the pot.

Step 2 of 3

Divide the cashew brulee into 4 ramekins or heat proof containers. Place into the fridge to set for a minimum of 2 hours.

Step 3 of 3

Once chilled, remove from the fridge topping each brulee with a tbs of sugar. Use a blow torch to caramelize the sugar while carefully rotating the brulee making an even crust.
