  • 200grams wheatmeal biscuits, crushed
  • 60grams unsalted butter
  • 3/4 cup condensed milk
  • 2 eggs, yolks only
  • 2 medium lime, juice and zest only
  • 1/3 cup whipped cream
  • 2tablespoons icing sugar

Description

A simple but creamy lime based pie.

Method

Step 1 of 5

Pre-heat the oven to 180°C and lightly butter a muffin tin for 6.

Step 2 of 5

Combine the biscuits with the butter fully and press them into the muffin tins covering the base and the sides.

Step 3 of 5

Combine the condensed milk with the egg yolks and also 3 tbs of lime juice and the zest of 1 lime.

Step 4 of 5

Empty this into the biscuit bases and bake in the oven for 15 minutes.

Step 5 of 5

Once cooked, allow to cool before serving garnished with the whipping cream and icing sugar.
