- 250grams butter, cold, cut into cubes
- 100grams dried cranberries
- 100grams caster sugar
- 1 large orange, juice and zest
- 3 medium eggs, beaten
- 1 1/4 cup buttermilk
- 1/3 cup milk, for brushing

Description
These simple scones are easy-to make, moist in texture with a zesty twist and packed with tart dried cranberries.
Method
Step 1 of 3
Pre-heat the oven to 200°C. Place the flour and butter cubes in a large bowl and rub the butter into the flour using your finger tips, until you have a fine crumb consistency.
Step 2 of 3
Add the dried cranberries, sugar and orange zest. Add the beaten eggs and orange juice and mix. Add half of the buttermilk, mix well and add the rest gradually to form a dough.
Step 3 of 3
Turn the dough out onto a lightly floured work surface and roll out to 4cm thick. Cut into discs with a glass or cutter. Repeat with the trimmings. Place on a lined baking sheet, brush the scones with milk and bake for 14-16 minutes until risen and golden.
