Pear & Cinnamon Strudel

- 4 ripe pears, peeled and sliced
- 2teaspoons ground cinnamon
- 1 handful raisins
- 1-2tablespoons golden caster sugar
- 15 sheets filo pastry
- 1 knob butter, melted (to brush)
Method
Step 1 of 3
Line a baking sheet with baking parchment. Place the pear, cinnamon, raisins, and sugar in a bowl, mix well, then put to one side. Brushing the sheets of filo with a little melted butter as you go, layer 3 sheets on the baking sheet, then layer another 3 next to them.
Step 2 of 3
Sit another 3 layers of filo pastry on top, placing them with the long edges facing in the other direction. Repeat with another layer of 3 so you have an oblong-shaped base. Spoon the filling down the centre, then fold over the edges. Top with a final layer of 3 sheets of filo and brush the whole thing with butter. Double-wrap in cling film and freeze.
Step 3 of 3
To serve, defrost in the refrigerator overnight. Brush the strudel with more melted butter and bake in an oven preheated to 200°C for 30-40 minutes, or until golden brown.
