- 600grams chicken thighs, cut in half
- 500milliliter buttermilk
- 1 1/2 cup plain flour
- 1/2 cup cornflour
- 1tablespoons paprika
- 1tablespoons chicken stock
- 1tablespoons chilli powder
- 2teaspoons chicken salt
- 1teaspoons black pepper
- 1teaspoons garlic powder
- 1teaspoons onion powder
- 1teaspoons cayenne pepper
- 1teaspoons baking powder
- 3L oil for frying
Description
Best crunchy chicken ever, easy to follow steps and works ever time.
Method
Step 1 of 3
Place chicken in a dish and cover with buttermilk. For best results, leave overnight.
Step 2 of 3
Combine remainder of ingredients in a bowl.
Step 3 of 3
Take chicken from the buttermilk, without shaking off too much excess milk, and coat with dry ingredients. Place chicken straight into oil for frying. Fry @ 180 degrees for 4 minutes. It is best to do these in small batches just before frying, otherwise the flour coating soaks up too much milk and doesn't get as crunchy
