  • 1.50kilograms Woolworths RSPCA Approved Seasoned Whole Chicken
  • 1/3 cup panko breadcrumbs
  • 50grams parmesan, finely grated
  • 2teaspoons garlic powder
  • 2 1/2tablespoons extra virgin olive oil
  • 2 bunches broccolini
  • 1/2 bunch oregano, sprigs picked
  • 1 lemon, cut into wedges

Description

Succulent roast chicken recipe with a golden garlic and panko breadcrumb coating is a must try for a delicious and easy dinner.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Place chicken in a large roasting pan lined with baking paper. Using unwaxed kitchen string tie legs together and tuck wings under chicken. Combine breadcrumbs, half the parmesan, garlic powder and 2 tsp oil in a small bowl. Sprinkle crumb mixture over chicken, pressing onto skin to secure. Roast for 1 hour or until chicken is cooked through and the crumb mixture has formed a golden crust.

Cook broccolini in a large saucepan of boiling water for 3 minutes or until bright green and tender. Drain. Place half the broccolini on a serving plate. Top with remaining parmesan and season with pepper.

Step 3 of 3

Place chicken on a serving platter. Arrange remaining broccolini around chicken, top with oregano and season with pepper. Serve with cheesy broccolini and lemon wedges.
