  • 8 chicken thighs
  • 1-2tablespoons olive oil
  • 1tablespoons cayenne pepper
  • 1 lemon (juice only)
  • 1tablespoons dried oregano
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 bunch spring onions (chopped)
  • 200grams wild rocket leaves
  • 1-2tablespoons good-quality thick balsamic vinegar
  • 1 small handful fresh Parmesan cheese shavings (to serve)

Method

Preheat the oven to 200°C. Put the chicken, olive oil, cayenne, lemon juice, and oregano in a large bowl. Season well with salt and black pepper. Rub everything together using your hands until the chicken is well coated. Leave to marinate in the refrigerator for 30 minutes if you have time; if not, cook straight away.

Tip the chicken into a large roasting tin, and roast for about 40 minutes until beginning to char slightly. Meanwhile, in a bowl, mix together the spring onion and rocket leaves.

When ready to serve, drizzle a little balsamic vinegar and sprinkle a pinch of salt over the rocket mixture. Top with the Parmesan shavings, and serve alongside the chicken.
