  • 1-2teaspoons olive oil
  • 1 lemon, grated zest
  • 2 lemon, juice only
  • 1teaspoons paprika
  • 2teaspoons salt
  • 1teaspoons freshly ground black pepper
  • 1 whole spatchcock chicken
  • 1tablespoons dried oregano

Method

Step 1 of 2

Put the oil, lemon zest and juice, paprika, salt, and black pepper in a bowl or shallow dish, and mix together well. Add the chicken, making sure it is well coated in the marinade. Allow to marinate in the refrigerator for 1 hour. (Put the chicken and its marinade in a plastic freezer bag for better coverage if you like.)

Heat the barbecue or charcoal grill until hot. Sprinkle the oregano liberally all over the chicken, and grill over a low heat for 40-50 minutes until golden and cooked through, turning frequently. Remove to a plate, and leave to rest in a warm place for 15 minutes.
