  • 1/2 cup light thickened cream
  • 2 carrots, sliced at an angle into 4cm pieces
  • 1 red onion, cut into wedges
  • 1 lemon, cut into wedges
  • 100grams smoked cheddar, grated
  • 500grams baby white potatoes, halved
  • 2tablespoons olive oil
  • 10grams fresh tarragon
  • 4 chicken thigh cutlets, skin on

Method

Step 1 of 3

Preheat oven to 200°C. Place chicken onto a chopping board. Using your fingers, separate the skin from the meat to form a pocket. Fill with cheese and season.

Step 2 of 3

Heat oil in a large roasting pan over medium-high heat. Add chicken, potato, onion, carrot and lemon, and cook for 10 minutes or until golden on all sides. Add tarragon and cream.

Step 3 of 3

Transfer pan to oven. Cook for 20 minutes or until chicken is cooked through.
