- 400grams coleslaw four seasons
- 1 lime, rind finely grated, juiced
- 425grams corn cobbettes
- 1/3 cup whole egg mayonnaise
- 1 simply roast butterflied chicken sweet garlic & herb marinade
- 2teaspoons olive oil
- 4 tortillas, warmed (to serve)
Method
Step 1 of 6
Remove chicken from the fridge 30 minutes prior to cooking. This will take the ‘chill’ off the chicken and ensures even cooking. Preheat oven to 190°C.

Line a roasting pan with foil. Remove chicken from packaging and place in the pan, skin side up.
Step 3 of 6
Cook for 30 minutes. Add corn cobbettes to roasting pan around chicken and drizzle with oil. Brush the chicken with pan juices, then continue to cook for 30 minutes or until chicken is cooked through (see note).

Meanwhile, combine mayonnaise, lime rind and juice in a bowl. Add coleslaw and stir well to mix through.

Remove chicken from oven, cover loosely with foil and rest for 5 minutes.

Cut chicken into pieces using poultry shears. Serve with tortillas, coleslaw and corn. Note: Calculate total cooking time for chicken by allowing 20-25 mins per 500g.
