  • 4 potatoes , cut in wedges
  • 1/4 pumpkin , peeled if preferred and cut into large pieces
  • 3 carrots , peeled and cut into large pieces
  • 1 zucchini , cut into large pieces
  • 1 tomato , diced
  • 1 onion , peeled and sliced
  • 2 clove garlic , peeled and chopped
  • 1 sprig rosemary
  • 4-6 sage leaves
  • drizzle olive oil
  • salt and pepper (to taste)

Method

Step 1 of 3

Preheat oven to 180°c Place vegetables except for tomatoes and herbs on an oven proof dish.

Step 2 of 3

Place chicken legs on top of vegetables. Top with diced tomatoes, herbs and olive oil. Add salt and pepper if desired.

Step 3 of 3

Bake at 180° for approximately 1 hour or until chicken and vegetables are fully cooked and have slight caramelisation.
