- 10 chicken legs
- 4 potatoes , cut in wedges
- 1/4 pumpkin , peeled if preferred and cut into large pieces
- 3 carrots , peeled and cut into large pieces
- 1 zucchini , cut into large pieces
- 1 tomato , diced
- 1 onion , peeled and sliced
- 2 clove garlic , peeled and chopped
- 1 sprig rosemary
- 4-6 sage leaves
- drizzle olive oil
- salt and pepper (to taste)

Method
Step 1 of 3
Preheat oven to 180°c Place vegetables except for tomatoes and herbs on an oven proof dish.
Step 2 of 3
Place chicken legs on top of vegetables. Top with diced tomatoes, herbs and olive oil. Add salt and pepper if desired.
Step 3 of 3
Bake at 180° for approximately 1 hour or until chicken and vegetables are fully cooked and have slight caramelisation.
