  • 2 cup buttermilk, save 2 tbs
  • 1/3 cup hot sauce
  • 2teaspoons salt
  • 900grams chicken, breast, legs and thighs, bone in, skin on
  • 250grams plain flour
  • 2teaspoons garlic powder
  • 1/2teaspoons oregano
  • 1/2teaspoons chilli powder
  • 1/2teaspoons black pepper
  • 1L canola oil

Description

Slightly spicy southern fried chicken is delicious in a burger or wrap for a fake away treat.

Method

Step 1 of 3

Mix the buttermilk, hot sauce and half of the salt in a large bowl. Add the chicken to the bowl, cover with clingfilm ad refrigerate for 1 hour.

Step 2 of 3

Place the flour, garlic powder, oregano, chilli powder, black pepper and remaining salt in a bowl and whisk to combine. Spread out on a plate. Take the chicken pieces, shake off excess buttermilk and dip into the coating, covering each side.

Step 3 of 3

Pre-heat the oven to 140°C. Heat the oil in a large, deep pan to 170°C and cook the chicken in batches for 10-12 minutes, turning. Keep the first batch warm in the oven on a baking sheet as you fry the remaining pieces.
