  • 50grams pickled cucumber, store bought jar
  • 4 chicken breasts, butterfly cut
  • 1 cup buttermilk
  • 1 medium egg, free range
  • 2tablespoons paprika
  • 1tablespoons cayenne powder
  • 1teaspoons onion salt
  • 1 cloves garlic, peeled and finely diced
  • 1/2teaspoons rosemary, dried
  • 200grams flour
  • 1teaspoons baking powder
  • 1/2teaspoons cornstarch

Description

A crispy way to enjoy chicken with some mild spices.

Method

Step 1 of 5

In a mixing bowl, combine a cracked and beaten egg with the buttermilk. Add all the herbs and spices to the bowl and combine fully.

Step 2 of 5

Add the sliced chicken to the bowl and marinade fully, then cover the bowl with cling film and leave the mixture in the fridge overnight.

Step 3 of 5

The next day, combine the flour, baking powder and cornstarch in a separate bowl. Take 4 tbs of the marinade from the fridge and combine it fully into the flour mixture.

Pre-heat the oven to 170°C. Heat up a shallow fry pan to a medium heat. Take the marinated chicken and dip into the flour mixture ensuring all parts are covered evenly. Shallow fry the chicken, turning half way, for 5 minutes in total and then leave to one side.

Step 5 of 5

Transfer the fried chicken to a suitable baking tray and bake for another 30 minutes or until fully cooked through. Remove from the heat and serve on brioche, pickled cucumber and your choice of sauce.
