  • 1 1/2 cup plain flour
  • 2tablespoons cornflour
  • parsley leaves, fried (to serve)
  • 1tablespoons cajun seasoning
  • 2teaspoons smoked paprika
  • 1/4 cup garlic aioli (to serve)
  • 1/2teaspoons finely ground black pepper
  • 1 cup buttermilk
  • 1 egg
  • 2tablespoons salt flakes (plus extra to serve)
  • 350grams kaleslaw, prepared (to serve)
  • 1L vegetable oil (for deep frying)
  • 1kilograms chicken pieces

Method

Step 1 of 3

Combine half the salt with Cajun seasoning, paprika and pepper in a small bowl. Sprinkle spice mix on chicken pieces and place on a large plate. Cover and refrigerate for 2 hours, or overnight if time permits.

Step 2 of 3

Combine flour, cornflour and remaining salt in a large bowl. Whisk buttermilk and egg together in another large bowl. Coat chicken pieces with buttermilk mixture, cover with flour mixture and place on a tray.

Step 3 of 3

Line a baking tray with paper towels. Place a wire rack over paper. Heat oil in a deep frying pan over medium heat. When hot, cook chicken in batches for 10 minutes or until golden, crisp and cooked through. Transfer to rack to drain. Sprinkle with extra sea salt and parsley. Serve with aioli and Kaleslaw.
