  • 1/2 cup plain flour
  • 1 red chilli, to garnish
  • 1 cup crunchy peanut butter
  • 1 lime, wedges (to serve)
  • 2tablespoons sweet chilli sauce
  • 1tablespoons soy sauce
  • 1 cup vegetable oil (for shallow frying)
  • 4 chicken thigh fillets

Method

Step 1 of 3

Place peanut butter into a bowl. Add 1/2 cup boiling water and stir until a smooth sauce forms. Add chilli sauce and soy sauces. Place flour into a separate bowl.

Step 2 of 3

Heat 3cm of oil in a large saucepan over a medium-high heat. Cut each chicken fillet into 3 large pieces and coat lightly with flour. Coat floured chicken with peanut butter sauce and add to hot oil, 3-4 fillets at a time. Cook for 3-4 minutes each side or until golden and cooked through. Transfer to a tray lined with paper towel.

Serve chicken with lime wedges, sliced chilli and extra sweet chilli sauce.
