  • 4 chicken thighs
  • 2tablespoons minced ginger
  • 1/4 cup rice wine
  • pinch salt
  • pinch pepper
  • 1 cup cornflour (or rice flour)
  • 2 cup vegetable oil
  • 2tablespoons tomato sauce
  • 2tablespoons gochujang sauce
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 2tablespoons soy sauce
  • 2tablespoons minced garlic
  • 1/2teaspoons sesame oil
  • 2 cuP rice

Method

Step 1 of 10

Chop the chicken into bite sized pieces

Step 2 of 10

Marinade the chicken in rice wine, ginger,salt,and pepper for 30 minutes

Step 3 of 10

In a small saucepan mix the tomato sauce, gochujang, Soy sauce, honey,sugar, garlic and sesame oil.

Step 4 of 10

Heat the sauce over a medium heat until all combined, simmering until thick.

Heat oil in a medium saucepan

Step 6 of 10

Coat chicken in corn flour or rice flour. Dust off excess flour and deep fry until golden. Repeat in small batches to ensure the oil doesn't cool down too much

Drain on kitchen towel

In slightly larger batches, refry the chicken until fully cooked and deliciously crunchy

Step 9 of 10

Toss chicken in a mixing bowl with a few spoons of the sauce. I did this in batches to make sure that it all got a nice coating.

Step 10 of 10

Serve straight away over your favourite rice. You could garnish with sesame seeds or some finely sliced spring onions.
