  • 1tablespoons cooking sake
  • 1 cup cornflour
  • 1teaspoons sesame oil
  • 1teaspoons ginger, grated
  • 1/4 cup kewpie mayonnaise (to serve)
  • 1tablespoons soy sauce
  • 2 garlic cloves, crushed
  • 1teaspoons sugar
  • 1L vegetable oil (for deep frying)
  • 500grams chicken thigh fillets
  • 1/4 cup chilli sauce (to serve)

Method

Step 1 of 4

Cut the chicken into 3cm pieces and place into a bowl. Add soy, sake, sesame oil, garlic, ginger and sugar and mix well. Set aside to marinate for 30 minutes.

Step 2 of 4

Heat oil in a wok or large pan. Dip chicken pieces into cornflour to coat, shaking off any excess.

Step 3 of 4

Fry the chicken in batches for about 3 minutes until golden brown. Remove using a slotted spoon and drain on paper towel.

Step 4 of 4

Serve with chilli sauce or mayonnaise.
