  • 1 bunch mint, leaves removed, finely chopped
  • 1 pinch pepper (for seasoning)
  • 1/3 cup apple cider vinegar
  • 1tablespoons caster sugar
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 2

Place mint, sugar and 1/2 cup boiling water in a jug. Stir until sugar dissolves. Add vinegar. Season. Stir until combined.

Step 2 of 2

Cover and chill for 30 minutes to allow flavours to infuse. Serve with lamb.
