  • 1 pinch ground white pepper (to taste)
  • 2teaspoons lemon juice
  • 1tablespoons dijon mustard
  • 1 cup olive oil
  • 2 egg yolks
  • 1/2teaspoons sea salt

Method

Step 1 of 2

Place yolks, mustard, lemon juice, salt and pepper in a glass bowl. Whisk for 1 minute to combine. Gradually add half the oil, 1 tsp at a time, whisking constantly to combine (this takes about 15 minutes).

Step 2 of 2

Add remaining oil in a slow, steady stream, whisking constantly until thick and glossy. Store in a clean glass jar in the fridge for up to 1 week.
