- 3 eggs
- 2tablespoons lemon juice
- 3/4 cup extra light olive oil
- 2teaspoons mustard
- 1 pinch pink salt ground (to taste)
Method
Step 1 of 4
Separate eggs and process yolks with lemon juice in a food processor for 30 seconds.
Step 2 of 4
With motor running, slowly add extra light olive oil in a steady stream.
Step 3 of 4
When a thick mayonnaise forms, add Dijon Mustard, salt and pepper.
Step 4 of 4
Process until just combined.
