  • 2tablespoons lemon juice
  • 1/2 cup light olive oil
  • 1 free range egg yolk

Method

Step 1 of 2

Place egg yolk and lemon juice in a heatproof bowl over a pan of simmering water, ensuring the bowl doesn’t touch the water. Whisk for 4-5 minutes or until light and fluffy. Gradually add oil, 1 tbs at a time, whisking continually until mixture thickens. Remove from heat, season and set aside.

Step 2 of 2

Serve over cooked meat, fish, eggs or steamed vegetables.
