  • 10tablespoons butter
  • 2 cloves garlic, peeled and minced
  • 6tablespoons dill, fresh, chopped
  • 6tablespoons parsley, fresh, chopped
  • 6 large eggs, beaten
  • 360grams plain flour
  • 300grams breadcrumbs
  • 1/2teaspoons salt
  • 8tablespoons sunflower oil

Description

A Ukrainian dish loved all over the world, classic chicken Kyiv is hard to beat and not as tricky as you might think to make from scratch.

Method

Step 1 of 5

Mix the butter, garlic and herbs in a medium bowl and place on parchment paper. Roll up into a long cylinder and place in the freezer for 1 hour.

Step 2 of 5

Slice the chicken breasts lengthways to butterfly. Place between 2 sheets of parchment and bash with a rolling pin to flatten.

Step 3 of 5

Remove the butter from the freezer and slice into 4 long pieces. Place a stick of butter on each chicken breast and roll up tightly. Place the rolls in the freezer for 25 minutes.

Spread the flour out on a plate, season the breadcrumbs and spread on another plate. Beat the eggs in a shallow dish. Remove the chicken from the freezer, dredge each one in flour, dip in beaten egg then coat fully with breadcrumbs. Dip again into the egg and coat for a second time with breadcrumbs.

Pre-heat the oven to 200°C. Heat the oil in a large, deep pan on medium heat and cook each Kyiv for 1-2 minutes on each side until lightly golden. Place the Kyiv's on a baking tray and bake for 20-25 minutes, until golden and crisp.
