For the crumb
  • 250grams breadcrumbs
  • 60grams flour
  • 1 medium egg, cracked and lightly beaten
  • 1/4 cup milk
  • 2tablespoons canola oil
  • 1 pinch salt
  • 1 pinch cracked black pepper
For the filling
  • 150grams button mushrooms, washed, drained and chopped
  • 2 cloves garlic, peeled and diced
  • 1/4 cup cream
  • 1tablespoons parsley, chopped
  • 100grams butter, slightly softened
  • 4 medium chicken breasts, butterfly cut

Description

These crispy chicken Kyivs have a comforting creamy garlic center.

Method

Step 1 of 9

In a pan on a medium heat, fry the mushrooms for 4 minutes until the liquid evaporates.

Step 2 of 9

Add the garlic, cream and parsley to the pan and fry for 2 minutes and remove from the pan to allow to cool.

Step 3 of 9

Once the mix has cooled, mould it into the butter and place in the fridge for over 1 hour to harden.

Pre-heat the oven to 180°C/160°C fan-forced. Using a tenderiser, flatten the butterflied chicken lightly.

In 1 bowl, combine the beaten egg with the milk, in another bowl sift the flour and in a 3rd bowl, place the breadcrumbs with the seasoning.

Cut the butter into 4 pieces and put inside the cut chicken and fold back over.

Dip the stuffed chicken into the flour and cover fully, then the egg wash and finally cover in crumbs.

Heat up a non stick pan with the canola oil and fry on each side of the chicken for 3 minutes each.

Transfer the kyivs to a baking dish and bake in the oven for a further 15 minutes or until cooked through.
