  • 1 medium onion, peeled and sliced
  • 2 cloves garlic, peeled and minced
  • 1teaspoons oregano
  • 400grams chopped tomatoes
  • 2 demi baguettes, halved and split
  • 150grams mozzarella, grated

Description

These tasty and easy meatball subs are perfect for speedy and simple comfort food.

Method

Step 1 of 3

Heat the oil in a large pan on medium high heat and cook the meatballs, stirring often, for 6-8 minutes until browned all over.

Step 2 of 3

Add the onion, garlic and oregano to the pan and cook for 3-4 minutes. Pour over the chopped tomatoes, reduce the heat and simmer for 10 minutes.

Step 3 of 3

Spoon the meatballs and sauce into the baguettes and sprinkle the mozzarella on top. Place on a baking tray and under a hot grill for 2-3 minutes until the cheese has melted and serve.
