  • 2 cups self-raising flour
  • 1/2 cup desiccated coconut
  • 1/2 cup sultanas
  • 210mL prepared NAN OPTIpro Toddler Milk Drink
  • 1 1/2 cups mashed ripe banana (see tip)
  • 90grams apple purée
  • 2 eggs, lightly whisked
  • 1 cup Greek-style natural yoghurt
  • 125grams raspberries

You will need 3 large or 4 small bananas for this recipe.

Method

Step 1 of 3

Preheat oven to 180°C/160°C fan-forced. Grease and line a 10x20cm (base) loaf pan with baking paper, extending paper at two opposite sides for handles.

Step 2 of 3

Combine flour, coconut and sultanas in a large bowl. Make a well at centre. Add prepared milk, banana, apple and eggs to flour in bowl. Mix until well combined.

Step 3 of 3

Pour banana mixture into prepared pan and smooth surface. Bake for 45 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes, then transfer to a wire rack to cool. Slice and serve with yoghurt and raspberries.
