  • 1/2 cup dried cranberries
  • 1/2 cup unsalted peanuts, chopped
  • 2/3 cup condensed milk
  • 150grams chocolate, melted*

Chewy and crunchy at the same time, perfect partner for a cuppa.

Method

Step 1 of 7

Place mixed fruit, peanuts and cranberries in a bowl. Gently mix together using your hands, separating the fruit as you go.

Step 2 of 7

Add the cornflakes, continuing to mix through with your hands.

Step 3 of 7

Stir through condensed milk until all ingredients are blended together.

Step 4 of 7

Using a cookie scoop, put portions on to a tray lined with baking paper. Allow room for biscuits to spread.

Step 5 of 7

Bake in a moderate oven for 10 to 12 minutes until lightly browned. Let the biscuits cool on the baking tray.

Step 6 of 7

Using a spatula, gently lift biscuits from baking paper and place upside down on a cooling tray. Melt chocolate until smooth. Working quickly, spread chocolate on the bottom of each biscuit. Use a small fork to make lines in the chocolate and leave to set.

Serve with a cup of tea or coffee for afternoon tea.
