- 80grams feta, crumbled
- red chilli, sliced (or chilli flakes, optional)
- 2tablespoons coriander leaves, chopped (to garnish)
- 1 spring onion, finely chopped
- 2 avocados
- 12 small cocktail prawns, peeled, tails removed
- 1 lime, juiced
- 12 solanato tomatoes, quartered
Method
Step 1 of 2
Combine prawns, tomato, onion, feta, lime juice and chilli, if using, in a bowl. Toss gently.
Step 2 of 2
Halve avocados and remove stones. Fill hollows with prawn mixture and top with coriander.
