  • 80grams feta, crumbled
  • red chilli, sliced (or chilli flakes, optional)
  • 2tablespoons coriander leaves, chopped (to garnish)
  • 1 spring onion, finely chopped
  • 2 avocados
  • 12 small cocktail prawns, peeled, tails removed
  • 1 lime, juiced
  • 12 solanato tomatoes, quartered

Method

Step 1 of 2

Combine prawns, tomato, onion, feta, lime juice and chilli, if using, in a bowl. Toss gently.

Step 2 of 2

Halve avocados and remove stones. Fill hollows with prawn mixture and top with coriander.
