  • 1teaspoons vanilla extract
  • 1/4 cup sprinkles, to decorate
  • 3 sheets frozen shortcrust pastry, partially thawed
  • 385grams can Woolworths apple slices pie fruit, drained, chopped
  • 1/3 cup blackberry jam
  • 1tablespoons cornflour
  • 1/2teaspoons ground cinnamon

Description

After an apple pie recipe with a twist? Give these blackberry jam and apple pie bites a try and enjoy flashbacks to eating these treats as a kid.

Method

Step 1 of 5

Preheat oven to 200°C/180°C fan-forced. Line 2 large baking trays with baking paper. Cut each pastry sheet into 6 even rectangles.

Step 2 of 5

Combine apple, jam, cornflour and cinnamon in a medium bowl. Spoon 1 1/2 tbs of apple mixture over half of the pastry rectangles, leaving a 1cm border on all sides.

Top apple mixture with remaining pastry rectangles. Press edges with a fork to seal. Place tarts on trays. Refrigerate for 10 minutes to chill.

Bake for 25 minutes or until pastry is golden and cooked through. Stand on trays for 2 minutes, then transfer to a wire rack to cool.

Step 5 of 5

Meanwhile, to make the icing, place icing sugar and vanilla in a bowl. Gradually stir in 2 tbs water to make a thin icing. Spoon icing over tarts and scatter over sprinkles. Stand for 20 minutes or until set. Serve.
