- 1 cup panko bread crumbs
- 1 free range egg, lightly beaten
- 400grams pork chops
- 1/4 red cabbage, hard core removed, shredded
- 1/4 savoy cabbage, hard core removed, shredded
- 1/2 carrot, shredded
- 2 spring onions, finely chopped
- 2tablespoons pickled jalapeno, chopped
- 1/4 bunch coriander, sprigs picked
- 1/2 cup whole egg mayonnaise
- 1 lemon, cut into wedges

Method
Step 1 of 4
Combine seasoning and panko on a large plate. Place egg in shallow bowl. Dip pork chop into egg, then coat in panko mixture.
Step 2 of 4
Place pork into the basket of a 4L air fryer. Set temperature to 180 degrees celcius and cook pork for 15 minutes. Remove from air fryer.
Step 3 of 4
Meanwhile, combine cabbages, carrot, onion, japapeno, half of the corriander and half of the mayonnaise in a bowl.
Step 4 of 4
Spoon jalapeno coleslaw onto serving plates. Top with pork and remaining coriander sprigs. Serve with remaining mayonnaise and lemon wedges.
