  • 1 small onion
  • 2 cloves garlic, crushed
  • 1tablespoons chipotle paste
  • 1tablespoons tamarind
  • 2teaspoons tomato paste
  • 1teaspoons dried oregano
  • 1/4teaspoons ground cinnamon
  • 2tablespoons olive oil
  • 1 pork ribs
  • 1 pinch salt
  • 1 pinch pepper

Method

Step 1 of 3

Put all the ingredients except the pork in a mini food processor or blender and blend until smooth. Pierce the meat of the ribs a few times with a sharp knife, then place in a shallow dish. Rub over the marinade, cover with plastic wrap, and leave to marinate in the refrigerator for at least 4 hours and preferably overnight.

Step 2 of 3

Remove about 3 tablespoons of the marinade and reserve. Wrap the ribs in a double layer of foil and place on a baking sheet. Bake in a preheated oven, 148°C, for 1½ hours.

Step 3 of 3

Remove the foil and baste all over the ribs with the reserved marinade. Heat a barbecue or ridged grill pan until smoking hot, add the ribs and cook for 3-5 minutes on each side, until charred all over.
