  • 3 mandarins, peeled, cut crossways thickly sliced
  • 60grams baby rocket leaves
  • 1/2 red onion, thinly sliced into rounds
  • 1 fennel bulb, trimmed, thinly sliced

Description

It's easy to cook the best pork belly and crispy pork crackling in an air fryer with this recipe. Balance the pork perfectly with our fresh mandarin salad.

Method

Step 1 of 3

Preheat air fryer to 200°C. Pat pork dry with paper towels. Rub salt flakes into rind. Line air-fryer basket with foil. Place pork belly, skin-side up, in basket and cook for 30 minutes or until skin is crisp. Reduce heat to 160°C and cook for a further 20 minutes or until pork is cooked through. Rest for 15 minutes.

Meanwhile, combine mustard, honey, vinegar and oil in a small bowl.

Just before serving, toss mandarin, rocket, onion and fennel in a large bowl. Serve sliced pork with salad drizzled with mustard dressing
