  • 1/2 bunch continental parsley, sprigs picked
  • 250grams leftover roasted turkey, finely chopped
  • 1 cup leftover bread-based stuffing
  • 2 spring onions, thinly sliced
  • 2 free range eggs, lightly beaten
  • 1/2 cup plain flour
  • 1 cup Woolworths panko breadcrumbs
  • 2 cup milk
  • 2/3 cup whole egg mayonnaise
  • 1 cup Woolworths cranberry sauce

Description

Transform leftover turkey and stuffing into golden and crunchy air-fryer croquettes served with crispy parsley and cranberry mayo.

Tip:
Don’t have an air fryer? Place croquettes on a baking paper-lined baking tray, then bake in an oven preheated to 220°C/200°C fan-forced for 15 minutes or until golden.

Method

Step 1 of 4

Finely chop half of the parsley. Combine turkey, stuffing, onion, chopped parsley and half of the egg in a large bowl. Season. Roll level tablespoonfuls of turkey mixture into balls to make a total of 12 balls. Place on large plate.

Step 2 of 4

Place flour and breadcrumbs on separate large plates. Combine milk and remaining egg in a shallow bowl. Working with 1 ball at a time, coat in flour, dip in egg mixture, then coat in breadcrumbs. Place on a baking paper-lined baking tray.

Step 3 of 4

Preheat air fryer to 200°C for 3 minutes. Place half of the croquettes in air-fryer basket. Cook for 10 minutes, turning halfway through cooking, or until golden. Transfer to a tray and cover to keep warm. Repeat with remaining croquettes, adding remaining parsley in last 2 minutes of cooking.

Place mayonnaise in a small bowl. Stir in sauce until almost combined. Scatter croquettes with crispy parsley and serve with mayonnaise mixture.
