  • 1 cup plain flour
  • 3/4 cup milk
  • 125grams butter, chopped
  • 3 free range eggs, at room temperature, whisked
  • 1 cup caster sugar
  • 2 1/2 cup vegetable oil, for deep frying

Method

Step 1 of 4

Place milk and butter into a small saucepan over a medium-low heat, stirring until butter melts and mixture comes to the boil. Add flour and stir vigorously with a wooden spoon until well combined. Continue stirring for about 2 minutes or until mixture comes away from the side of pan and forms a ball.

Step 2 of 4

Transfer to a food processor. With motor running, add eggs, one at a time, and process well between each addition until thick and glossy. Transfer mixture to a bowl and cover surface with plastic wrap. Refrigerate for 1 hour or until firm.

Step 3 of 4

Place sugar in a bowl and set aside. Pour oil into a small saucepan until approximately 10cm deep. Place over medium-low heat. Using oiled hands, roll tablespoons of mixture and place onto a baking tray lined with plastic.

Step 4 of 4

Drop 5-6 balls into oil and cook for 5-7 minutes or until golden and cooked through. Remove with a slotted spoon and roll in sugar. Continue to cook remaining dough balls, taking care that the oil does not get too hot. If dough balls are cooking too fast, remove saucepan from heat and allow oil to cool.
