  • 125grams butter, melted, cooled
  • 250grams plain biscuits
  • 3 egg whites
  • 3/4 cup caster sugar

Method

Step 1 of 3

Preheat oven to 180°C. Grease a 24cm loose-base fluted tart tin. Process biscuits in a food processor until like fine crumbs. Add butter and process until combined. Press firmly over base and sides of tart tin. Bake for 10 minutes. Cool.

Step 2 of 3

Whisk caramel until smooth, adding a little warm milk, if necessary. Spread evenly into tart shell.

Step 3 of 3

Beat egg whites and pinch of salt with electric beaters until frothy. Add sugar, 1 tbs at a time, beating well after each addition. Beat for 1 minute or until thick and glossy. Dollop meringue over caramel and bake for 10 minutes or until golden. Serve.
