  • 200grams fresh dates, pitted (approx. 10 dates)
  • 1 cup fruit & nut mix, roughly chopped
  • 4 cup popcorn, roughly crushed
  • 1/4 cup coconut oil, melted
  • 1/4 cup smooth peanut butter

Method

Step 1 of 4

Place dates in a food processor and pulse to make a rough paste. Add coconut oil and nut butter. Process until smooth.

Step 2 of 4

Scrape date mixture into bowl. Add popcorn and fruit and nut mix. Mix with a wooden spoon until mixture binds.

Step 3 of 4

Line a large tray with baking paper. Roll 2 tbs of mixture into balls and place on tray. Freeze for 30 minutes or until firm.

Step 4 of 4

Transfer balls to a large snap-lock bag and store in the freezer for up to 2 weeks.
