  • 2 small green apples, sliced into 1cm thick rounds
  • 8 shallots, peeled, quartered
  • 800grams cans cannellini beans, drained, rinsed
  • 1tablespoons balsamic vinegar
  • 8 pork sausages
  • 1tablespoons wholegrain mustard
  • 1 cup reduced fat milk
  • 1 cup apple cider

  • 2tablespoons rosemary leaves (plus extra, to garnish)
  • 1 clove garlic, peeled, halved

Description

Make this hearty but simple sausage casserole a weeknight dinner staple. It's a delicious and budget-friendly meal the whole family will love.

Method

Step 1 of 4

Heat oil in a large non-stick frying pan over medium heat. Cook sausages and shallots for 8 minutes, turning, until golden brown.

Step 2 of 4

Meanwhile, to make the white bean mash, combine beans, milk and garlic in a small saucepan over medium heat. Simmer gently for 5 minutes or until garlic softens. Season to taste. Transfer to a blender and purée until smooth. Keep warm.

Step 3 of 4

Remove sausages from pan. Add apple and rosemary and cook for 2 minutes, each side, until lightly browned. Pour cider into the pan. Return sausages to pan and simmer for 5 minutes or until cooked through and liquid has reduced by half.

Step 4 of 4

Transfer sausages and apple into a serving bowl. Stir mustard and vinegar into pan juices and season to taste to make gravy. Pour gravy over sausages and sprinkle with extra rosemary leaves. Serve with white bean mash.
