- 1/2 cup tomato sauce
- 3 cups broth (chicken, beef or veggie) (or water)
- 1 1/2 cups long grain rice
- 1 chorizo sausage
- 3 beef sausages (or pork)
- 500grams seafood mix
- 1/2 green or red capsicum (large)
- 1 brown onion (large)
- 2 celery sticks
- 1/2tablespoons oil
- 1/2teaspoons ground black pepper
- 1/2teaspoons salt
- 1/4teaspoons cayenne pepper (optional)
- 1teaspoons red chilli powder (optional)
- 1teaspoons smoked paprika
- 1teaspoons ground cumin
- 1/2teaspoons fennel seeds
- 1teaspoons brown sugar
- 4 cloves garlic (finely minced)
- 1/4 cup coriander or spring onions (chopped)
Description
A one-pot dish with sausages, seafood & rice of Creole origin. Very popular in the New Orleans.
Method
Step 1 of 16
Cut the chorizo sausage and the beef / pork sausages into small pieces (about 1/2 cm pieces).

Rinse the seafood mix and drain well.
Step 3 of 16
Dice the onion, capsicum & celery.
Step 4 of 16
Heat up a small amount of oil into a large pot or pan. Make sure it is deep enough as the whole dish will be cooked in this.

Add the chorizo sausage pieces into the pan. Toss through until it is warmed through.

Add the beef / pork sausages and cook until browned on all sides.

Transfer the cooked sausages to a bowl. Keep the oil in the pan as this has a lot of flavour.

Add the diced onion, capsicum and celery into the pan and saute for a few minutes until softened.

Add all the spices and the minced garlic to the vegetables in Step 8 and cook for 2-3 minutes or until you can smell the spices. Be careful not to burn the spices.
NOTE: Skip or reduce the amount of cayenne pepper and red chilli powder if you wish otherwise this dish is quite spicy.

Return the cooked sausages to the pan, and also add the tomato sauce and broth / water to the pan. Turn the heat up to bring to a boil.

Meanwhile, wash and drain the rice. When the broth is boiling, sprinkle in the rice.

Stir for a few minutes until the rice is evenly distributed and the broth remains boiling. Then lower the heat to simmer. Cover the pan with a lid and cook the rice for 10 minutes.

After 10 minutes, add the seafood to the top layer and push them down slightly into the broth but do not stir. Cover the pan with a lid again and cook for another 10 minutes.

Open the lid and check that the seafood is cooked. Once the seafood is cooked, taste a few grains of rice to make sure it is cooked. If not, cover the lid again for a couple of minutes. If all the liquid has been absorbed before the rice is cooked, add a small splash of water to make sure the rice is thoroughly cooked through.

Once the rice is fully cooked, turn the heat off and let the dish sit for another 10-15 minutes with the lid closed.

When ready to serve, open the lid and sprinkle with chopped coriander or spring onion as a garnish. Transfer each portion to a plate or bowl and enjoy.
