- 1/2 yellow capsicum, sliced (plus 1/2 green capsicum sliced)
- 2tablespoons coriander leaves (to garnish)
- 60grams cherry tomatoes, halved
- 1 cup zucchini, grated
- 2teaspoons lime juice
- 2tablespoons natural yoghurt
- 50grams unsalted natural corn chips
- 20grams baby spinach leaves
- 1/2 cup crushed tomato
- 250grams low fat beef mince
- 2teaspoons olive oil
- 2tablespoons reduced fat tasty cheese, grated

Method
Step 1 of 8
Heat oil in a small frying pan over medium heat.

Add mince and cook for 5 minutes until well browned.
Step 3 of 8
Add vegetables and crushed tomato and cook for 5 minutes until vegetables are tender.
Step 4 of 8
Preheat grill to medium high.
Step 5 of 8
Pile corn chips onto a heatproof plate.
Step 6 of 8
Grill for 1-2 minutes until warmed and cheese has melted.
Step 7 of 8
Top with mince mixture, cherry tomato, capsicum, spinach and coriander.

Stir lime juice into yoghurt and drizzle over.
